I got to know this recipe thanks to the Halina Nieć Legal Aid Center Association. In their work of helping refugees, they bring the culture of other nations closer to them. Every month they publish an ebook with recipes. I decided to test a few of them and the first to hit the cake with berries – mainly because the fruit will not stay for too long. The tasting was very satisfactory in the garden.

finnish blueberry pancake – ingredients
for a 24 cm deep cake oven
100 g of butter,
50 g of sugar,
1 egg,
100 g wholegrain wheat flour,
100 g wheat flour,
1 Tbsp of baking powder
stuffing:
300 g of berries,
200 g of sour cream,
1 egg,
50 g of sugar,
1 teaspoon of vanilla sugar
Finnish blueberry pancake – recipe
Grind butter with sugar, then add the egg and, after mixing, dry the ingredients. The dough should be free-flowing in consistency. Pour it over the bottom and sides of the cake maker at a height of about 3 cm. Spread the berry on the dough. Mix the sour cream with egg, sugar and vanilla sugar. Pour the berries into the oven, which is heated to 200°C, and put it on the bottom shelf. Bake for 30-35 minutes.
